The destructions say in the wire coming from the brake switch so when you hit the brakes to put the truck in gear it disables the remote start

I said, "Where?", not "Why?" You have four easy options, driver j/b, either kick panel, or at the switch. I'm not going to type details for all four.

Well. Which one is the easiest to access? The wire coming out of the switch is not accessible

I have no idea which is easiest--I just know they are there. But left kick panel sounds like a good bet. So your green/white wire is in connector IE2, a big whitish one with 22 pins, at Pin #10. Pin-out of Connector IE2 is shown on page 39 here:
