How do you do it? I've been meaning to do it and I have never seen a write-up, and I follow this forum pretty closely. I can figure it out, but any tips are welcome.
Just connect some clear hose to the bleeder on the slave cylinder with the other end going into a container to catch the old fluid. Then I have someone push down the clutch pedal and hold it down, while I open the slave cylinder bleeder and quickly close it again while there is still pressure forcing the fluid out.
Then I have my helper let the pedal up slowly, then repeat until the fluid coming out is clean.
Just keep a close eye on the fluid level in the reservoir, as the level drops fairly quickly in the small clutch fluid reservoir, compared to the larger capacity brake fluid reservoir.
For the brakes I use one of these:

Then start bleeding the system as you normally would: right rear, left rear, right front, left front.
For the power steering fluid I use Mobil 1 ATF. I loosen the pressure line on the steering rack, and let the fluid drain into a bucket. There is a small brass compression fitting inside which the line seals against. Don't lose that. When it's has stopped draining, I re-connect the pressure line to the steering rack, and fill the reservoir with fluid to the proper level.
This doesn't get out all of the fluid, but it gets more out than just siphoning the reservoir.
When you initially start the engine, there will be air the system which may cause a brief whine from the pump, but that will go away quickly as the fluid pumps through the system.
Re-check and adjust the level if necessary, after the engine has run for a bit.
