I made the switch a few months ago, though I went from a 1st gen taco to a 4th gen 4runner. There's days where I really miss my Tacoma, but I got pretty attached to it also, so that didn't help. All that aside, I was in the same position as you as in I didn't use the bed much and always liked 4runners.
As mentioned earlier, if you fold down the 4runner seats you can fit quite big items back there, or just a ton of stuff together. Also, if you ever need, you can take a nap back there- something I've never been able to do in the Tacoma. The 4runner, though it's a 4th gen V8, is a much smoother ride and has much more "comfort" features as mentioned (sunroof, rear defrost, etc.).
You sound like you are pretty set on it, as so was I. I actually still want a 3rd gen (my favorite gen as well) so much that I'll probably end up selling my 4th gen and buying a third. Either way though, you can't go wrong with staying in the Toyota family.
