I won't be claying the unpainted plastic, I wasjustvworried about the overspray from the detailer.

No. Just keep the wax away! Taping off areas you don't want to hit works great during the whole detailing process.

For the interior dash, plastic and rubber parts, I use 303 Protectant. Excellent stuff, not greasy or slippery, has a satin shine and lasts a long time. For just a good sealant, I can recommend a product called Rejex, it was originally made for the aircraft industry, Gives you a good shine and a slick hard finish that stuff like bird crap and bugs won't stick to. I keep a couple of coats of Rejex on the front of all my cars (including the Vette ) cause the bugs just hose right off.
