So this is how I feel when I mess with wiring...

Ok so this is what I need help with. I had a sweet switch housing 3d printed and I will be putting it in my 3rd gen in the next couple months. It holds 10 switches. I want to do this the right way and use relays with these switches so that everything is safe. But I don't know jack about how to properly wire stuff up. I have done some reading and I am starting to get an idea, but I am hoping you guys can help me so I don't waste a ton of time and money on the wrong stuff, or messing up things. So this is what I have so far.
Switches - I want to run the OTRATTW Contra 5 etched switches. I want them to be illuminated as well. But as far as DPDT, DPST, etc, I have no idea what switches I need...
Relay/Fuse Block - I have looked at a lot of options and I found this one on Expedition Portal. Bussmann RTMR 15303-2-2-4 Mini Fuse & Relay Power Distribution. I really like that it has the relay sockets, and that it is sealed so I can put it in the engine bay and not worry about anything bothering it. I may entertain putting it in the cargo area as well, but that seems like a ton of work... I will use all of the pins and seals and everything that goes along with this so that it all works really well. I am open to other suggestions as well. Oh, and yes I know I will need 2 of them to run 10 relays (do I need to run relays on everything?).
Wire - I have no idea what gauge wire to use or what kind...
Diagram - No idea yet of how to set this all up...
Use - So below is a picture of my switch holder. It has room for 10 switches. This is what I have tentatively planned for the switch uses.
1. Bumper Lights (3 55W)
2. Roof Rack Lights (not sure yet, probably 4 55W)
3. Camping lights on roof rack (probably small LEDs)
4. Air Compressor (ARB)
5. Front Locker (ARB)
6. Rear Locker (e-locker, will be ARB one day far far away)
7. Aux Power, probably for a fridge
8. Aux Power, not sure where or what
9. Winch power on
10. Winch in and out
