How the hell I do replace this gasket?

by removing the upper intake plenum if i remember right.
just buy some gasket material and cut one out using the part as a template and put a thin layer of RTV on both sides when you put the new gasket in.
 
I believe it's simply called the bypass, or coolant bypass--a rather elegant solution for fitting all the various temp sensors in the coolant stream without plugging them in all over the block.
 
Removing the plenum is just removing the bolts on top of it. Pulling all the vac lines and the intake off. Its really easy just take pics off where all the hoses connect its annoying trying to remember where they went.

If you would like pics I will be pulling my motor tonight and will be pulling the plenum off.

Dude, I would really appreciate that, I'm going to try to tackle my issue this coming week.
 
Without a doubt, the tough part is getting all the various lines and hoses off the passenger side...and remembering where they go when it goes back together. The molded hoses aren't too bad, as they'll point the way to their fittings--it's those annoying vacuum lines that are the real pain. Take photos beforehand, and maybe mark with tape as they come off, matching hoses with fittings. The plenum itself is nothing--I think 6 bolts hold it on, then you'll probably have to pry it up to break the manifold gasket loose. Some really handy tools for this job are extended-reach pliers in various angles (straight, 45 and 90 degree bend).

I asked my wife while she was out once to pick me up zip ties, and she brought home these neon colored ties. So I have an opportunity to use em lol... for marking purposes

I'm leaking like 1/8 of a gallon of coolant a day from this thing. I dont even know what its called to purchase a gasket for it, any help is appreciated.

Its located on the back of the block towards the firewall right above the exhaust manifold

Sounds to like its the water bypass outlet because I fixed a blown head gasket on my 95 and the outlet is in the location you described plus it does have a gasket also. And to get to that is to take your intake off. Then looked straight in the back towards the wall and it will be a little bit downwards.

Ya the gasket i have a extra one from getting screwed on last motor.
I also have a extra bypass too.

it would have been nice to have that seal when I did mine. my replacement engine had every single sensor back there broken off. of course, the damn thing had a gasket I didn't think to get. I was mad at it, so I cleaned it up and used some rtv silicone. it does not leak.talk about luck.
