I have several dash back lights and 2 door panel window control lights out on a 2000 (rear defrost, ect, passenger and security). How big of an ordeal is it to replace these and is this something I would be able to find in a factory service manual? Any links to FSM's would be appreciated.

what do you mean by backlight? climate controls? those lights along with the window control panel are LEDs. either buy LEDs and do some mod or you could get factory LEDs to replace them. but for mine, i bought a different LEDs and replaced them. i have a '97 and the climate control is only 1 LED.
It is the same lighting as the climate controls, i.e. the white writing is "backlit" and has a greenish color in the dark when you turn the headlights on. If I push the rear defrost button, there is the small slit which turns red, which still works fine. They just can't be seen at night, I know where they are, but if someone else is driving, they can't find them.
I went by the dealer today to let them "take a look", they said I would have to remove the entire center piece of the console and door panels, respectively, to replace the bulbs. Estimated in the neighborhood of $125-150, they said probably not worth the money unless I just can't live without it, or if I could do it myself.

i will do a write-up soon because alot of users wanted to know how to change it. it's pretty simple if you really thought about it. the hard part is taking the dash, panels, etc. out. and also you need the time to do it also. but at most, if you do it yourself, it would cost under 20-30 dollars.
