Rim and Tire Question

I'm due for new tires here soon so i figured that I would go ahead and pull the trigger for some new rims also. I want to stick very close to stock tire height but i want the tire to wide enough to fill up the whole wheel well and be very close to sticking out. If I'm going with an 18 inch rim any idea on tiresize and rim backspacing?

Do you have a lift? Are you interested in a street, A/T or M/T tire?

I am going to order the 1.5 leveling kit here soon. I want to go with an all terrain tire probably the nitto terrra grappler.
