Why do most people choose the Daystar kit over the Toytec? I would think a full 3" in front would be more desirable?

Not necessarily. Tophat spacers come with their own set of issues, particularly if you go for excessive lifts. Generally, 2.5" or so is about the limit. Above that you have three problems.
1) The shock will become the limit for up travel rather than the bump stop. That's hard on the shock and can bend and destroy it, especially if you drive aggressively over rough terrain.
2) The down travel will be excessive and can bind up the inner CV joint at full extension, leading to breakage.
3) A 3" lift will likely require aftermarket upper control arms to get the alignment in spec, especially caster.
Splitting the lift between tophat and preload spacers alleviates problems 1 and 2, but not 3.

Ok thanks, so even just a half inch of more height really aggravates the above issues? I've seen a lot of Daystar kits and they have too much rake for my liking. My rig will be on road 99% of the time, maybe 100%.
If you're on road all the time, you won't likely run into either of the first two issues. But yes, an extra half inch can be where the CV fully locks up.
You will have to deal with the front end alignment with any lift. Obviously, that's important for a highway vehicle. Lifting reduces available caster, leading to wandering on the highway.

I've noticed that too, and that's why I'm considering putting the 2.5's up front and leaving the rears alone.
