If you do it right, you'll need 3 gallons. Draining the rad, overflow, and block, I removed ~11 of the 13 quarts Toyota says the system holds. Checking an old post, I said the block drains produced about half of that 11 quarts, so yes, if you only drain the rad/overflow then 2 gallons will do. However, you'll be leaving a lot of old coolant in the system.
There's a good writeup around here somewhere for doing the block drains. IIRC, all you'll need is a 24" socket extension, a wobble adapter, and the correct diameter vinyl hose for the banjo fitting. And the hose is optional...just depends on whether or not you want to take a coolant shower. ;-)
