What do you guys reckon these switches under my dash do?

The one on the right is kinda like a remote flash plunger thing. I assume it's some kind of aftermarket alarm system, but I can't figure what's that plunger type button on the right might be for. Thanks.

Probably a valet switch for an aftermarket alarm.

Those look like the switch and valet button that come with DEI remote starts. The valet button is for programming and the switch is generally used for disabling a remote start. Take it to a DEI dealer and they can probably program a remote for you and have the system working. It is likely a remote start, maybe remote start alarm, but you would probably have seen an LED on the dash if it was an alarm also.

My guess is the previous owner had a aftermarket DVD head unit installed and had it bypassed to play DVDs on the move by using a switch.

Those look exactly like my DEI Viper Alarm and remote start.
The flip switch disables the remote start for working on the car...switch it off when you take it to the shop or if you do your own work since it would suck for the truck to start halfway between changing oil...

The push button is the valet button that is used for programming and setting various modes of the alarm system.

Dig deeper under the dash or kick panels and look for a box with a bunch of wires...or a bunch of cut and capped wires if someone cut the system out.
The box should be labeled as to what type of alarm/remote start system.
