when to change shocks

I know this is an old thread, but I had to chime in and say that I need some new shocks! Got 245,000 miles on the OEM. Never been changed! Guess it is time... :)
 
I just got my first car and it is a 2005 4Runner with 160k and I absolutely love. We took it to the mechanic and found out that the shocks are leaking. It's not that big of a deal but I was able to convince my dad to upgrade to the bilstein 5100s. We're getting them for the front and rear. I was wondering what would be the optimal height to adjust these shocks too? I'm looking for the perfect compromise between a lifted look and stance while still trying to get as close to a stock ride as possible. I'm also trying to make it sit more level in general. I'm sorry for the long paragraph. And I am new to this type of thing. Please help!
