I never knew the first 5 speeds (2003) had a dipstick either, I just assumed they all were sealed, but I had several 2003 owners post that they had the 5 speed and it indeed had a dipstick, even had one owner post photos of his showing it was a 5 speed and did have a dipstick.
There maybe some later/last in the production run of 2003s that has a sealed transmission but no one ever chimed in that they had a sealed 5 speed trans in their 2003.
I even thought about trying to see if a pan from the early 5 Speed would fit on my sealed trans, not so much for checking the level but to make it much easier to put the fluid in, but gave up on the idea because I would never be certain if the level was truely correct.
