I don't go off anything more than a dirt road so I didn't need 4WD. I would love to have it and do some off-roading again, but I know that I would tear stuff up like I did on my last 4x4.

IMO, there is only one reason to not get the V8...if you want 4wd and want the ability to run in 2wd. The full time 4wd is bulletproof though, so even this argument is weak.
Gas mileage is NOT an issue. Figure 15K miles per year. 17mpg vs 19mpg at $1.50/gallon. This amounts to a whopping $140.00 per year!
The V8 is super sweet in this vehicle. It's quiet, smooth and an animal if you want it to be. Mated to the 5sp auto it's pure joy.
Drive them both several times...I did. V8 was the easiest 800 bucks I've ever spent!

I just got back from a dealer's lot and drove a V6 2WD Sport and a V8 2WD Sport back to back. Let me tell you, not even 5 minutes into my V8 drive I knew I had to have it. Felt much more powerful (almost effortless compared to the V6), was much more quiet and was markedly quicker than its V6 counterpart. Nothing against the V6, as I'm sure it is a good engine, but the difference was astounding to me. I LOVED the V8!

I'm really trying to get to 100...no seriously, if you are a motorhead, get the V8. It makes a tremendously beautiful V8 sound when you are gettin' on it. On the other hand, the V6 does more or less just make a loud, airy roar when taching it up.
Here's another comparison...if you think an Audi engine is as fun to drive as a BMW engine, then get the V6, you won't know the difference!

I have the v8.. I love it. A good friend of mine has the v6 limited. I drove his a few times before I bought mine and did feel it needed a bit more power.. I got into the v8 and could not believe the difference.. I just drove from New Haven CT to Lincoln N.H. about 360 miles. I loved the v8, it was powerfull,quite, handle the mountain highways (inclines) very very well. I reset my mpg and mph computer. I got 18.4 mpg at an average speed (so the computer said) of 73 mph.. Most of the time the cruise was set at 85mph, so I used a tank each way.. I am more impressed now then ever and am very very happy with my v8 choice. And I really dont tow that much.

How about the issue of reliability? I read in Consumer Reports New Car Preview 2004 that the V8 model is rated much better than average and the V6 is rated as much worse than average (page 141)
As I unserstand the V8 is the same as the Tundra/Sequoia/Land Cruizer/GX 470/LX470. and a near relative to the big Lexus sedan but no variable cams and no aluminum block.
The V6 is a new design which, like all new engines must go through some use before reaching it's potential.
I picket the V8 because it ran smooth and has a good track record. The difference in gas mileage has as much to do with driving habits as anything else. You will get worse mileage with the V8 because you can and will drive it a bit harder.
Actuallly I would like to make a trip with two 4Runners driven together trying to match every moove and see what the difference in mileage really is. The only way to know thiese things is to try them out. Very slight differences in driving make all the difference.
