For the kick panels, just remove the door sill plastic (4 or 5 exposed screws) and pull up. then, grab the kick panel from the back and pull towards you (straight back along the axis of the truck). That's it. Passenger side is the same.
The dash console is pretty simple too. Pull up on the cup holder, and work it around the e-brake handle. Then grab the back end of the next piece (around the shifters) and pull up. You'll need to work the boot off the plastic, it's just friction fit on there. Then start prying up the main console trim, pulling up and towards you. You'll need to unclip the cigarette lighter harness and accesory outlet harnesses. Once you get to the top, you'll need to reach behind and remove several more wire connections, just depress the tab and pull. There are at least 3 at the top (ECT/defrost, clock, window). Once that large trim piece is removed, you'll easily see how the stereo is attached to the dash frame.
