When I throw it in reverse, it seems to immediately let go. Would a sticky caliper do that?

It could. Take your calipers off, remove your master cylinder cap and take a large C-clamp and slowly compress the pistons in and see if they move in smoothly..If you feel any kind of drag they are probably sticking. Re-install before stepping on the brakes and be sure to put the cap back on your master cylinder...Move to the back and check the condition of your brake shoes and drums..Any kind of moisture back there, track it down, fix it and then clean up the shoes and drums or replace them..

I'll check into that.
The thing is. I can't replicate it, but it only happens when I'm braking slow. When it happens on gravel, the tires lock up and I slide, which is why I thought it may be ABS, but sticky caliper sounds plausible as well

Check your rear drums and shoes. I just went through this. The left rear drum was stuck to the shoes do to a leaky seal. My symptoms were just like yours. When I put it in reverse in the AM it would finally break the shoes loose and this is what you're feeling. It's worth looking at anyway.
