Just a heads up .... Really really do upgrade your Spindles while you have the front suspension apart. Don't end up like I did.

I plan on installing OME 861 springs in the rear, which gives 4-4.5" of lift. Do you think the 8.5" travel shocks will work with that much lift?

I have 861s in the rear and love them. Super flexy while still supporting all the added weight we have.
As for bypasses...
Essentially bypasses allow you to fine tune your rebound and compression. It allows you to have more control, especially at higher speeds.
With bypasses, it's usually a good idea to get limit straps as well. I'll be upgrading to rear 10 or 12" smooth body shocks with resis in the not to distant future and plan on doing a limit strap set up with that as well. The bypasses are a bit more expensive and a limit strap kit will help keep the internals happy while making sure they don't over extend.
Bypasses tend to leak into the long travel realm since there is so much adjustment to them and typically it's felt more on a 'go fast' basis. TacomaWorld is an awesome resource for reading about them and asking questions. If you click URL="https://www.tacomaworld.com/threads/considering-long-travel-read-here-first.180457/"]Here[/URL], it'll take you to a "Considering Long Travel" thread that'll touch on some of the pros and cons of bypasses. Since there are tubes coming off of them, they often make a clicking noise that can't really be drowned out; so make sure you're prepared for that.
This link will take you to a BS chat as well. These guys know way more than me about bypasses and can sort of lead you in the right direction (even though they are leafed in the back).
From what I've gathered talking to guys and reading, bypasses really come in handy for that 'go fast' type driving. If you're just doing trail riding and DDing, or something along those lines, a smooth body shock will likely be okay. If you still plan on going fast, but not jumping it, definitely consider a Reservoir. This will keep your shocks happier as the fluid inside will have more room to expand. This Video will talk about some of the pro's of reservoirs on a shock, even if it is a King sponsored video.
Sorry if it seems like I'm pushing some of your questions elsewhere. In my experiences, TacomaWorld has A LOT more information-especially when pertaining to suspension.

8" travel shocks will be 14" compressed and 22" extended
8.5" travel shocks will be 14.5" compressed and 23" extended
Regarding the remote resi: Are they piggy back style, or a flexible connection with a rubber hose?
