my spare matches my other Ultra Bolts, and the tire itself always matches the tread in every season. this is going to be the year that those become my winter rims, once its time again to put the studded Duratracs back on. Summer rubber will be going on 5 Konig Countersteers (possibly), and my MTR's will be going on 5 beadlocks.
I'm a bit anal like that though

Extra rims
If you buy two extra rims and set them aside just in case, you've paid half the price of the rims for something you may never need. It's expensive insurance.
If the rims provide a vastly different tire size, then the spare may be smaller and narrower than the 4 tires you have on the ground. If you have a flat the spare will not match and that's not good for the rear axle if you're using the locking differential or you're cruising down the highway in 2 wheel drive. Having the same size tire on your spare is the only reason I see for having a 5th rim that matches.

I wouldn't bother. Rather than spend 1.5x the money on a set of rims, gambling that you MAYBE will ruin one and it MAYBE will be discontinued, I'd take the gamble that you PROBABLY won't ruin one and they PROBABLY won't be discontinued before you're sick of the wheels anyway and want to upgrade to something newer and possibly cooler. (Or trendier maybe?)
I've had one rim split on me on another vehicle. It was replaced on warranty, and became the only rim on the truck that wasn't pitted and in need of a freshening anyway.

Aftermarket spare
I drive a 2010 Trail (17" rims). I like to take a second spare along when I go off road. I've found that Chevy Silverado rims (from a junk yard) are plentiful and inexpensive. They will fit on the rear, but because of the dust cover on the front axle you have to ream the center hole or use wheel spacers to make the Chevy rims fit on the front.

Wouldn't hurt to have one to use as a spare, you can rotate it with your other four wheels so that one doesn't get super nasty from the underside of the truck.
