My 2003 Toyota 4Runner FSM (Volume 2, page 55-3) has that exact same illustration, and those exact same gauge readings, as you have posted.
The pic you posted is part of the trouble shooting section. Toyota does not specify the proper gauge pressure. Not too many do because there's simply too much variables that go into play.
Are you installing freon on a completely empty system? Has it been vacuumed or not?
I just did a 2008 for a customer this week. Replaced her condenser due to a cap nail flying into it. Got that baby down to 39.8 degrees after I was finished.

It is not empty, it cools to 45 degrees but the compressor seems to cycle quicker than I would think is normal. With a thermometer in the vent, it cools to 45 then gets up to 50 then back down to 45 every 8 seconds or so. When I took the manifold gauges off it this afternoon and purged the gauge lines, a lot of dye shot out. I'm going to put a vacuum on the system tomorrow and then recharge it and see where it gets me.
39.8 degrees FAHRENHEIT? Damn! Why on earth can't I get that kind of temp in my '05 SE?
Answer these questions before and after you mess with it today if possible.
