How to disable vehicle tracking/data on 2021/2022 models?

It would seem that the best way to cut all this off at the source is to find and remove the SIM card that enables the communications.

You are correct however, under the 4th amendment vehicle clause, police can search your vehicle without a warrant. Only need probable cause. Does that mean they can pull your computer history seeing how fast you were going, Were you on your phone, Even pull video camera footage, yes it sure does. Meaning that data your car has stored can incriminate you.

Can the police go through your cell phone without a warrant? Nope. Especiallyif locked. Many do or will try to trick you into letting them but that's theirs and your bad

Most of that incriminating evidence is in the vehicle event data recorder (Event Data Recorder | NHTSA). Back when Toyota was trying to defend themselves from the "unintended acceleration" issue, they tried to gain access to that info. But, for the most part, the courts have ruled that the info in the event data recorder belongs to the owner of the vehicle, and cannot be accessed without a court order.

But since so many police are in cahoots with the local magistrate, I doubt that they would have much of a problem getting the magistrate to sign off on a search warrant.

Everything else is free game. Do I believe this is a 5th amendment issue as well as a 4th. Yep. But we'll see. It'll probably take a politician phone records getting seized from their car or going to prison because GPS location said they were going way too fast to change this.

Police can force you to open with your fingers/face (what you have) but not with a PIN code (what you know).

No.

But there are lots of switches you can get that go in the unused, blank places on the dash. AliExpress is a good source for those.

Can the SOS button be repurposed to operate aftermarket accessories?

Yes, I pulled the DCM fuse and checked it's wiring harness. You can bypass microphone and right front speaker without using the DCM module. If you're savvy enough, you can find the SOS button wires and it's lights on that connector and use it as you wish. But your car already has some empty slots to buy some cheap switches, unless you have a fully feature packed model.
