So my gal and I were shopping at Costcutter and she asks "would you like me to make nachos for lunch?"
Music to my ears! And I grabbed a 6 pack of Kona Brew and about an hour later nachos were served.
A beautiful afternoon.
 
Last night was a pile of marinated shrimp on the grill, some grilled plantains, mango salsa, chorizo corn skillet and basmati rice.

The plantains got somewhat dry on the grill, which then topped with the mango salsa made for a really nice effect - almost like a plantain bruschetta really.

Brother in law came down from Seattle and we got drunk Friday night and woke up with a hangover.
I told him about a food cart here in Portland that had these sandwiches "As Seen On TV"

Found the place right off Grand ave in Produce Row tucked behind some warehouses.
Ordered and then drove up MLK to McDonald's by the convention center to buy a diet soda.
Ate the mofo right in McDonald's parking lot.
Killed the hang over real quick!

Al Pastor and Salsa Verde made for a fun Sunday yesterday.

The salsa verde couldn't have been easier - I just roasted some tomatillo, jalapeño, garlic and hit the blender with some cilantro and lime juice - very tangy hot which complimented the sweetness of the al pastor.

For the Al Pator I made a marinade or guajillo pepper, pineapple and orange juice, onion, garlic, etc and let the thin slices of pork butt mellow out for a while before stacking with fresh slices of pineapple on my rotisserie. Sprayed it down with more pineapple juice while cooking then shaved it with a sharp knife to serve on corn tortillas with red onion, radish, cilantro, salsa verde etc. Delish.

damn, now you might need to cut back on the fried food. but show us what you can do with the fryer tho, fry me up some spam and eggs.
