Chicken, chicken stock, bacon, garlic, fire roasted tomato, adobe peppers, roasted poblano, corn, etc. Top with white cheddar and fried torilla strips. So good.
I figured I would go ahead and take a shot on getting another punch on my man card. I made my first attempt at smoking some pork spare ribs.
They started out sitting in the fridge for about 12 hours while covered with salt and famous dave's rub. Then they sat in the oven at 250* for 3.5 hours and 45 minutes on a makeshift smoker setup on my grill. While smoking them I added famous dave's devil spit bbq sauce.

They literally fell right off of the bone and were absolutely delicious!
Never tried goat but I'm trying to support the neighborhood co-op and I love trying new things. I picked up a pound of local ground goat meat. Had no idea what to make at first and ended up with a goat kofta, heavily seasoned meatball skewer deal. I'm not gonna lie it was damn good and beat "lamb burger night" says my wife.
Served it up with a curried mint yogurt sauce, some basmati and a light salad.
Got a local pork tenderloin, awesome sized half cut, great for two people. Then roasted a whole cauliflower in a greek yogurt marinade tuned crust, lots of chili powder, cumin, garam masala, lime zest and juice. Spicy sour sweet delicious.
Then grilled the tenderloin with a dijon brush and some fresh cracked whole cardamom. Forks were abandoned I finished eating the rest of the pork with my hands. That cardamom/dijon deal is heaven.
Working on a beef wellington today. Just finished wrapping it up with fillo, prosciutto, mushroom duxelles around a horseradish mustard brushed beef tenderloin.
Back into the fridge she goes until it's time for puff pastry and heat.
