I was just given one that goes from my pedals to my steering wheel but I'd like to get the best protection as I live in Los Angeles! Any suggestions?

Seriously, there are a few things you can do, but if they want it bad enough, they will get it. There are several threads here about theft prevention. My goal is to make it as difficult as possible to steal. I wired a hidden starter switch in mine and put small "Lo Jack" decals on the windows as a deterrent. Years ago I lived in an apartment complex and used a locking chain meant for a motorcycle. I put it through the front wheel and around the frame.
If you can do something visible that makes them think twice, they will look for another less risky one to steal.

yeah! im thinking of fabricating something to lock the shifter in place with a padlock. like a welded on bracket on hinges! and the club. I like the lo jack sticker Idea. I forgot about the kill switch technique.

Don't have a pretty truck.
Don't park it in the same place every day, unless it's your garage.
Get a new key and ignition cylinder.
Wire a fuel pump or ignition cut-out circuit.
Sport a LoJack sticker. If you can afford it, get LoJack service or something similar.

I used to disconnect the coil every night and use a club before I had a garage to park in. I figured that most thieves aren't going to want to pop the hood and search for wires at 2am

^This. I pull the coil wire and have a club. As has been said, all u can do is slow 'em down.

Alarm remote starter
Paging 1 mile remote controller
Drone mobile gps smart phone interface
Battery backup
Digital angle sensor for tilt and motion and shock
Horn blasters train horns set to go off on full alarm trigger
Removed running boards so it's harder to climb on the truck with the doors closed.
Alarm system is your first line of defense. Passive things like the club, fuel starter, and shifter locks are counter measures.
Here's how I think...
Thieves 99.9% will not have the technology to block cellular signal unless there is bad signal already. So smart phone interface like Compustar drone mobile that works on Verizon's 4g lte network is a great defensive peeve(BTW only company that has 4g service, viper smart start is on 2g/edge service). This device can be set up to email up to 4 address and those can be text notifications too. App can be installed on multiple devices and that can notify you too.
Lojack it's a device only traceable if it's still on and powered up and only traceable by police WITH a receiver installed in the patrol car. In Philadelphia only a few cars have it "working" in my district lol. You need to find out it was stolen and then report it.that could be hours later and too late. Drone mobile unit would have notified you the moment the attempt occurred.
I don't think my truck it's all that pretty but I do have some pretty desirable stuff attached to it..winch lights wheels etc on the outside.
You are what you drive, drive it proud. Don't become a statistic, protect your investment. Harsh reality is majority of the population does not have security and when yours does, thieves move on to a easier target. Don't be a easy target.

Don't think that just because you have an older vehicle that you didn't add a bunch of stuff to, that it isn't a target.
My '89 Honda Prelude was stolen in 2001 or so from my then girlfriend's condo complex in Fremont, CA. Older Honda's were easy to get into (but I've also watched a "locksmith" an Accord with an easy pump up air bag ($80 or less online) in under 60 seconds), and that location was within 2 miles of 2 different freeways. At the time the car was only worth 3-4k.
But it looked like it could have had a nice stereo. Sadly, it was a previous owner that put in the extra amp and extra set of speakers in the back. I'm guessing by the time it was stolen, they were worth under $100. But I also foolishly left my work/laptop bag in the car, so though it had my wallet but no laptop, it was probably an attractant.
The car was found a month later 5-10 miles away parked on a residential street, likely sitting there from day 1. Paying the towing and storage fee cost more than replacing the car parts (stereo, speakers, and lock cylinder). And while I didn't have insurance on the theft of the car, my renters insurance paid for things in the truck that were stolen.
We have a few "clubs", but now our bigger issue is bears, and I haven't used one of our clubs since parking at the airport 5 years ago.
Long story short, even if you haven't invested a lot of money into your ride, make sure it doesn't look like there's something of value there, whether it's a stereo or other add-ons (winch, etc), or something dumb like a wallet, purse, or laptop bag.....or iPhone, iPad, etc.
Then for those crazy times, you can help make things tougher by welding on a bolt on something like a winch or even catalytic converter (my OEM bolt on cat on my 4runner was stolen....4 bolts and gone!)
But that gps enabled alarm kit seems cool! I thought about a cellular camera, and would be tempted by anything to find the culprits

I have to break into cars a few days a week. I have a lock out kit in my truck all the time. I can get into 99% of the cars it there in less than 2 minutes.
Will I set of a aftermarket alarm? Yes
Does anyone care when it goes off? No
Will I trip a Oem security while I am getting into a car? No
Oem security is what I call a false sense of security.
I do mobile fleet service, so I don't know what to expect when I get out to a disabled vehicle.

Today my club wouldn't unlock... After five whole minutes of key jiggling I got it undone, what a relief!
Im more worried about the whole truck being stolen. everything under the hood is new. If you wanted to get into the cab you can break the window or just slide it down with your hand.
seems like best things for me are, kill switches. clubs. shift locks.

Forget theclub.b It only takes seconds to cut through the steering wheel & remove it!
Get a good alarm with mobile ap. Like mentioned.
& like said, don't leave tempting items in the rig. Don't leave it in scetchy arias. Make everything as permanate / hard to get as possible!
But nomader what you do, if they want it bad enough, they will get it! & yes they can get into your grave & take it in less than a couple minutes.

If you have a ham license, you should get an APRS radio. It is everything lojack is for free. You can track it from a computer anywhere in the world.
I like and use the club because it is a visual device. Sure it won't stop anybody if they really want it, but it shows that you have taken precautions that will cost them time (a thieves worst enemy).
My choice of security devices..

Ive actually had someone try to steal my toyota pickup from my driveway while I was on vacation for 2 weeks about a year ago. I had pulled the driveshafts and tie rod prior to leaving and parked it sideways in the driveway so that a tow truck would have had a VERY difficult time trying to pull it out. Also pulled the main coil wire and disconnected the battery terminal. Long story short, came home from vacation to find my driver's door lock had been drilled out with the door just barely closed. Someone had left a toyota key in the ignition trying to start it. Battery terminal was reconnected, and the hood prop bar plastic holder thingy was broken. But my truck was still there.
Now Im not suggesting to pull the driveshafts and tierod, I only did that because I knew I was going to be on vacation for quite awhile, and being as it was a fairly nice truck at the time I didnt want it gone when I got back.
