All lifts are created equal?

Is there a good reason to keep the OEM top plate etc versus buying the KYB top plate like this?

I’m thinking the OEM bushings, etc are a better quality? Ideally I’d like to give the 6112 shock/coil to pep boys to assemble (for $20) then all I have to do is pop out the OEM assembly and insert the built 6112, removing the trip to pep boys in the middle of the job and allowing me to do one side at a time for references.

I don't know but I think KYB will be fine. My Subarus had bushings in the tophats but these are simple tophats with nothing obvious to go wrong.

I like your plan. You may notice that some youtube videos say that you must have the top oriented in a certain way. This is not true. The bottom of the shock is very easily rotated by way of a large screwdriver once the tophat is in place. This makes adjusting it correctly very easy.

You may want to read the review I posted in the Suspension section to see if you want to stay with 600 lb springs or if you want the 650lb springs. The 600lb do not really allow higher speeds, the combo is too soft. They can bottom out in a way I never thought a 2.65 in shock could.

I really have no idea on this one. I've never actually touched or seen a KYB one in person. My guess is the KYB one is just fine, but I don't know.
