There is absolutely nothing to worry about! You can still use your truck without the gauges! No vehicle lock-out or anything. Lots of people have done this swap problem-free.

The lights behind 2 of my HVAC controls are out. Not the indicators, but the lights behind the fan speed and fan selector are out (the temp one appears to be fine). Are these lights part of the swap, and if they aren't, can I pay a little extra for you to do mine while you have it?

You will be ordering Neo-3 and Neo-4 LED lights for the backlighting. Problem solved haha
