HELP, save me from getting shop raped!

I called my local mechanic shops to get quotes on refilling/flushing all of my fluids, and they quoted me a ton. Some won't even flush all of my fluids. And I'm scared that they won't even do the labor, just act like they do and get payed for nothing

Can somebody please point me in the right direction? I want to try and do the work myself if I can. If there's any detailed Writeups, I'd like to

Flush/refill

Powersteering - fluid type?
Transmission - fluid type?
Differential - fluid type?
Radiator - fluid type?
Brakes - fluid type?

I don't want to get stumped paying for services I may be able to do myself. Thanks

My 150k maintaince was done with:

Powersteering - fluid type? Maxlife ATF, used left over from tranny drain/fill. Believe the manual calls for DexIII ATF
Transmission - fluid type? Maxlife ATF ~3 qts drain/fill
Differential - fluid type? Mobil1 75w90 gear
Radiator - fluid type? Pentofrost A4 (pink) or Zerex Asian Formula
Brakes - fluid type? Valvoline Dot3/Dot4

Pretty inline with Zebruaj. For my 100K maintenance, I used...

Power steering - fluid type? Valvoline DexIII ATF
Transmission - fluid type? Toyota ATF WS (although I've read that Maxlife ATF is a good substitute)
Differential - fluid type? Mobil1 75w90 gear
Radiator - fluid type? Toyota SLLC (techs on this blog have said Zerex Asian Formula is as good)
Brakes - fluid type? Valvoline Dot3/Dot4
 
I know the feeling I want to do all my fluids it's just getting the time and the motivation to doing them all.
The brakes and power steering are the ones I will figure out but the transmission is the one I want have replaced not flushed.
My 03 was easy one the trans because it had a dip stick to do it with.

The cooling line method took me and my nine year old son 20 minutes. I had him turn the 4R off and on in order for it to spit the fluid out 2-3 quarts at a time, and I would pump the same amount of MaxLife back in with a chemical sprayer I attached a nylon hose to and connected to the return line. Just kept doing this until it was pumping out clean fluid. Once I got the car into temp check mode, I was more or less done after letting the excess flow out of the fluid check hole.
