Haha. One table is for cooking and one is for just laying food out. But I see what you are saying. And I won’t argue. I’ll definitely learn a lot from this trip ! By the way that made me laugh.

We do use our backpacking gear on the road trips and it does slim things down a bit. With our car camping 2+ week trips there will be everything from 30 degree nights and 115 degree days. Snow, rain, and sun too. Kinda ramps up what we take. Then there's the biking stuff. And the tools and recovery because moderate wheeling. Oh, and kid stuff. Definitely kid stuff.
Every year we try paring down from the year before, but still end up with a lot of things, sometimes different things, and do typically use a lot of it if not all.
Many of my mods have been inspired by these trips too.

and dont forget rain gear. Staying dry is so important to being comfortable especially if it gets cold.
That $50 big box store tent is not waterproof. Buy a really good tent, waterproof clothing. I like goretex pants & a jacket. Ponchos are for children. Waterproof boots, extra tarp or two. If you dont bring rain gear it will definitely rain on you! Set up tarps, start a fire & sip some whiskey because sitting in an over packed truck is no fun!
Rethink that for a second. I hungry bear will be more then happy to smash out a window to get that cooler. Now, his(or her) head and torso are half in the cab. Would you be able to start the rig and drive off? Just food for thought.
Same bear comes and gets in my cooler. I'm inside so I hop in the drivers seat and fire up the rig. Then I stomp the gas giving him a face full of fumes and dirt. I'm not saying that any of this will ever happen to either of us but if it does who's set-up would you rather have at that time? lol

Ritz-Carlton. I should document my overlanding trips in the NYC metro area. Not like we have any good outdoors shit like out west. Plus all the potholes are just like washboard roads.
Embarked on my overland trip about an hour ago. Dealt with some heavy washboard roads aka the Grand Central parkway and decided to set up camp in Jackson Heights. I forgot to install a fridge and stove in my 4Runner so I just got some kebabs at a Paki restaurant.
There’s a different kind of “bear” prowling the streets of New York.....they seem to be attracted to men in 4runners.....

I have a very similar set-up when going for long weekends. One thing I do is put the cooler under the passenger side rear tire. There's about 3" of a gap between it and the muffler.
