just read that if you run without thermostat the o2 sensor will open circut and cause rough idle. Anyone heard of this?

The thermostat and o2 sensor are completely different systems. The thermostat is a mechanical piece that opens and closes as the water temp fluctuates. The o2 sensor is wired directly to the ECU.
Maybe you were referring to the water temp sensor? If so, I have never heard of this. But I am far from an expert on how the ECU works under different circumstances. I have yet to see any manual that directly relates to the ECU and its different modes of operation.

Coolant temp is one of the sensors the ECM uses to control the EFI system.
Without a t-stat to regulate coolant temp properly, the sensor may not have proper temp info to supply to the ECM. Another possibility is having no t-stat may not provide the correct coolant flow to the temp sensor, and again a bad reading to the ECM.
O2 sensor is in the exhaust system, and without correct data from it to the ECM, the EFI system will stay in the open loop condition.
