What sort of driving causes the most mud to enter the engine bay?

I got lots of mud covering everything in the engine bay, and I want to avoid this in the future... trying to figure out what sort of driving is most likely to cause this.

Will simple splashing in mud puddles do this? Or is it getting stuck in mud and the tires spinning that causes this?

I also drove into a stream at a high speed and this caused an incredible splash - was this it?

Its all of the above.

The more exposure you have to those things, the more of it will end up in the engine bay.

Since my lift and larger tires those rubber protective engine bay / fender liner shields always get torn on, and might be the reason for the bulk of the mess.

It's all about speed. More speed = more mud splashed, and the amount going into your engine bay is directly proportional to the glorious splash you see out to the sides.
This rally car is obliviously hitting the puddle at speed and even with the large amount of skid plates and engine bay protection they have, you can still see mud spurting out the hood vents.

Where are you finding mud? All the malls I go to are paved.
