Question

I have a 2018 4runner SR5 4x4 Non-KDDS, with 275 70R17 BF Goodrich KO2 on Method wheels 305 NV 17x8.5 6x5.5.
I am looking at the BP 51 with OME UCA and medium-load back coil springs as my first option, I did find also another kit with the Bilstein B8 8112 coil-overs, OME UCA, the B8 5160 reservoir shocks, and the Standard OME coil springs, I don't plan to go a bigger tire, and I might just stay at a 2-inch lift not sure if I want to go as high as 2.5 that's not yet decided and currently, I don't have any extra equipment added or weight, the most I will possibly add is in the future a Dometic fridge.
I do offroading but I won't go too hard on trails, I don't usually speed but I could hit some trails at 30 or 40 mph on better terrain with not that much rocky terrain. this is usually done on weekends and this vehicle is also my daily driver, which I only use about 2 or 3 times a week with about 40 miles round trip. I have been hitting some trails with 7-10 difficulty and some less than that.
My question is what would I be giving up or gaining from one or the other?
I know that prices are different, but I have already taken that into consideration, and I know that adjustability is greater with the BP-51, some of my doubts are would the BP 51 adjustability be too complex for me to be switching from off-roading to daily driver?
Would the adjustability be very good for smooth rides off-road and on the street?
Can I get that smooth ride with Bilstein without having too much adjustment capability?
Also, am I losing too much by going with the B8 5160 reservoir shocks?
