Based on the way you've described the trouble, it would be extremely difficult to strip threads by removing steel bolts from a caliper or anything else for that matter.
Question: Are you leaving any thing out that could've striped the threads on the bolts/spindle/plate holes? Did you start the bolts back in the holes with just your fingers or were you using a socket wrench to start them in...
More than likely, the bolts aren't lined up properly with the threaded holes so the threads on the bolts won't start; that would make more sense (IMO)! Best to you!
Negative the threads came out of the hole, like literally came out of the hole, top piece of the caliper that has the piston in it is the piece I am referring to, you remove 2 bolts to remove it to get to the pads, Now i went and bought a new caliper and can't remove the bolts that attach them to the hub.....worst brake day ever........
I've never heard of threads just coming out like that...unless, did you do the brakes in the past, or someone else? Perhaps they cross threaded the bolt in with an impact driver or wrench and left it for the next person to find out the hard way..IDK.
I still would have tried a helicoil over a whole new caliper, but to each their own. I would suggest a breaker bar (I use an extra piece of steel tubing for hanger bars in closets about 15 inches long) on the tough bolts, after you've let them soak with some lube of some sort.
Good Luck, I know bolts like that can be a real PITA. My Jetta had the caliper pins completely corroded to the sleeve and I have to hand turn it with channel locks in a vice until it eventually inched it's way out.
They were literally coiled up the bolt and I unthreaded them by hand. How do you use a breaker bar in such a tight area?
