Should I run High Millage Oil?

I have a 2003 Limited V8 with 200K KM's (120K Miles) on it.

I'm about to move to the very cold Canadian prairies. I know in the cold I should be running 0-30 synthetic. Is that too thin of an oil for my mileage?

It will be fine. Remember when the vehicle gets to operating temp the Oil becomes 30W and 0 when cold. Since your using Syn, I think 5W30 will also work but of course better flow with 0W30. I was born '78, and lived in Winnipeg for 18 years, and my cars worked without Syn oil. My cars wouldn't start only due to the battery or a frozen gas line. But I think gas stations add gas-line anti-freeze now.

0W-30 is fine.. Run AMSOIL in mine, no worries!
