I have 5100 billies at the highest setting with stock coils and almost zero nose dive, even in "panic braking" situations. It's a huge difference from stock.

you are maxing out your preload to get the desired lift, but you are pushing the shocks to their design limits. a taller spring and a shorter spring perch will have the same effect, and you'll get more life out of your shocks. and if you think you have eliminated the nose dive now, wait until you get better springs (or a higher end shock with better valving). I used to run 5100's, the difference between bone stock, and 5100's with stock springs is small compared to the difference you get with 5100's and better springs as well.

Got any suggestions for which springs and at what height setting for 5100 to stay at around 2.5-3in lift? I'm open to new springs up front. I "need" to replace my UCA's (functional now, but just slightly out of spec) so might as well do springs too.

OME mediums are relatively cheap and will suit most people's needs.
 
Probably won't need the diff drop.

I don't think I have seen one person run it with all the different types and heights of lift.

Been running my lift for almost 5 years with no drop and not one CV broken or boot torn.

I run a diff drop..Have been in all my lifts I've done. When I installed my Shrockworks underbody armor we ran into a problem and i had to add spacers for my skid plate. I know I can run it without, but I am happier with it. Here's a picture of my CV angle.
