As far as the headliner goes, yes- start low and work your way up. You don't have to pull the seats though.
Door sill trims
B & C pillar lower trims pull off
Rear sill and upper trim(screws under light lens)
Pull lower rear seat belt bolts
Rear quarter trims pull off(screws in front cargo cover rests, but rear holds can stay. Also have to pull upper rear seat belt bolts once you get the panel pulled away in the front)
Front seat belt bolts on b pillar
Upper b pillar trim pulls off after one Phillips screw
Pull 3 grab handles that go into the headliner
Leave a pillar trim and handles
Pull sun visors and overhead console
Leave sunroom opening trim and rear plastic clips till you're ready to drop the headliner.
The plastic clips are a huge pain in the ass, and will 90% likely break.
The a pillar trims will help hold the headliner up till you slide it out the back. I think you will want the pull the trim loose over the front doors, just to relieve some holding pressure on the headliner.
Really not a difficult job, but a time consuming one.
