You don't think it's over kill?
Most of the time, LT E tires are overkill for midsize SUVs and I don't recommend them. However, the newest tires on the market (GY Duratrac, Toyo ATII, Cooper AT3, etc.) are being designed with weight savings in mind due to the more fuel conscious attitude of consumers based upon fuel prices. So... since you are set on the ATII Toyo tires I wouldn't hesitate to run the E version. They are listed at only 49 lbs. That's not bad at all.
My personal opinion is that I'd get the Hankook ATM or Cooper AT3 over the Toyo. Both of those are more aggressive and will work better in snow and mud. But the Toyos are pretty nice.
