If you want to be in the "4Runner hall of fame" you need to build a 4Runner how Toyota should have built it from the factory. With a lift, a snorkel, 35's, high quality leather interior, and a V8 engine mated to a 5 speed. In the end, a V6 is still just a V6.
Regarding the Tundra brake upgrade: You can fit both 231's and 199's on 16" wheels, it just depends on the back spacing of the wheels. 231's fit on 5 stars without modification. I don't know specifically about your wheels.

I have several months before pulling the trigger either way. I'm happy to discuss it here in the meantime. My biggest issues with the v8 swap is a) amount of downtime with the vehicle b) Logistics involved in getting a donor truck and or sourcing parts c) I've never done an engine swap. Could definitely learn but I take my time with EVERYTHING, so I can't imagine how long an engine would take me. I don't have a place to park a donor truck and I don't have the necessary tools for doing it at my house. Which means I would have to find someone and drive there every couple of days to put in work. Whereas with the supercharger route I can do the supercharger in my driveway. Get headers and tackle that later. Get water/meth kit and tackle that later, etc. All in small bites and all stuff I can manage.
Trevor offered his place in El Cajon to do the swap, but that's asking a lot and that means I'd have to drive 30-40 minutes each way every time I wanted to work on it. And considering his still isn't running I'm a bit more hesitant.
I'll have to do some digging then on the brake upgrade and see if anyone has done either with my wheels. I'm running 1.25" spacers in front which may or may not help, but I will be removing them after I put in new UCAs.
