Just got done retrofitting a 3rd gen 4Runner factory E-locker into my 4th gen rear axle. Got alot of goodies to go along with it:

I also got my built front diff with 4.30 gears from ECGS installed this weekend. I guess you could say I've been busy...
Not necessarily easy weekend mods, but I did do them all in one weekend

Replaced all lower door speakers with Rockford Fosgates
Replaced all bulbs on HVAC panel
Cleaned MAF
Things to do:
Remove running boards...might still do that today
Order a set of 5100s or find some 2nd hand

Did my rear diff breather relocate and was pleasantly surprised how easy it was! Just make sure you punch a hole in the right area of the rubber under the gas cap....the outside rubber goes into the body, rather than under it, and makes you feel stupid when you punch through and realize you can't get to the tube you just pushed in....at least nobody will see my mistake! (I did seal it up to prevent stuff getting inside)
Planning to do the 12v constant voltage mod tonight and may do the maplight/fog light mods while I'm at it. Been on an electrical mod kick lately after wiring in my CB and cleaning up the wiring on my ditch lights.

Yep, I would really like to see a pic of it mounted. I have had a grill cut out for months waiting to finish it as a Satoshi grill but never got around to it. This might be a great alternative option. Great job!

Just go on crutchfield.com put in your cars info and see what shows up. The head units have ratings. Kenwood and Pioneer are good brands but there are other as well. I'd recommend getting a headunit that has apple/android car play and capacitive touch type screen (will be similar to you phone screen).
I'm not sure if this counts as an easy mod, but it's what I built this weekend to get my Tepui off of my 4runner and stored for the winter. I was not able to find anything I liked so I built this with the help of one of my good friends. The hoist lifts the tent then I attach 4 cables to hold it up (and remove the weight from the hoist) and the hoist then acts as a backup. I might make a few changes over the winter like installing unistrut above the rafters and attach my 4 cables through it.
